The advantages of Alishan high-mountain tea
Amoung the many varieties of tea grown in Taiwan, the tea from Alshan is grown in the most ideal location and climate--also being the closest to the Tropic of cancer. According to professional research, the best locations in the world to grow ta ae located at high mountain altitudes within 50kms on either side of the equator. The concentration of ultraviolet rays on the high mountains aid the tea trees in the vital production of essential elements, such as polyphenols. Thefog in these high mountain environments also affects the development of the teas by keeping the teas from being overexposed to ultraviolet rays. This serves to bring out more moisture in the tea. Clouds above the tea plantts come and go as well, providing further ideal conditions for the tea trees. Alishan harbours an ideal environmentt forall the aforementioned factors in the growing of tea plants, which is why Alishan tea has earned a strong reputation for quality and great taste. |

OOLONG TEA
The specially developed Oolong tea we utilize for production at DigniTeaGarden was developed in the best area of Alishan--a location wit an altitude of about 1300-1800 meters. This particular area is an oasis of moisture for tea growth-ecompassing the area with abundant cloud cover and fog. This environment provides an ideal temperate climate, with just the right amounts of moisture, temperature, sunshine and rich soil. The tealeaves are thick and of good quality-suitable or semi-fermentation at low heat. Steeping teas of this variety yield a light color with various levels of fragrance and a distinctly strong flavor. These factors known to high mountain tea combine in such a distinctly rofound way at the point ofconsumption, lingering in he mouth for an extended period of time. OOLONG GABA TEA (Healthy Wellbeing Tea)
Oolong GABA tea is a natural tea product that contains Gamma-aminobutyric acid (GABA). Reearch conducted by Dr. Chiu Kuei since 1987 indicates that fresh tea under anoxic fermentation for a long time producehigh amounts of this particular amino acid. Studies also indicate that GABA tea has a regulatory effect on the sympathetic nervous system, thus becoming known as a natural tranquilizer. These are properties that are "naturally" good for one's health. |

DA HONG TIE (Oolong Black Tea)
DigniTea Garden has the distinct privilege of being one the first producers of high mountain black tea from Alishan. This special type of high altitude black tea has been developed by DigniTea Garden over many years. It is also the first Taiwanese black tea to be grown at a location exceeding an altitude of 1000 meters, making it one of the highestelevational regions for black tea to be grown. DigniTea Garden carrefully selects tea that is ideal for full fermentation, the fragrance of this particular tea is rich and the flavor is slightly sweet. This makes it quite different to other black teas. Ths tea should be served without sugar, though a small amount of cream might complement it well. The name of this tea in Chinese--Da Hong Tie--brings forth an idea of bliss, perhaps making it an ideal gift for friends and loved ones on special occasions.

JIN XUAN (Oolong 27)
Jin Xuan tea from Taiwan is tyically grown between an altitude of 500-800 meters. The Jin Xuan grown at DigniTea Garden is actually quite unique in that tis actually grown at an altitude of 1300-1500 meters. Our lightly roasted Jin Xuanyields a golden color when steeped, while our medium roasted Jin Xuan tea has more of a fruity flavor and is known to fill the room with a sweet aroma upon steeping in boiled water. In keeping with its somewhat feminine characteristics, this tea is especially favored by women. |

OOLONG GREEN TEA
At Dignitea Garden we also produce one variety of green tea. We do not employ fermentation, roasting or rolling procedures in the processing of this particular green t. This allows us to bring forth the most basic and original flavor that Alishan has to offer. Our green tea possesses a grassy fragrance and yields a golden-yellowcolor with a hint of green when brewed. This green tea is said to have a higher amount of vitamin c, and some compare the flavor to a wholesome variety of rice. Amount all the formosan teas, this subtle variety serves as the best reflection of all that is Taiwan. |
